Serves 4

This salad is great served as a side dish, tossed together with mixed greens or folded into a whole wheat wrap with your other favorite sandwich fixings.

2 cups cooked chickpeas
½ small red onion, small diced
1 tsp. minced garlic
1 tbsp. chopped cilantro
2 tsp. diced green chilies
2 scallions, finely sliced
20 Kalamata olives, pitted and chopped
3 tbsp. olive oil
juice and zest of 1 lemon
salt and pepper

Combine all ingredients in a medium size bowl and mix. Season to taste with salt and pepper.
